ตำแหน่งหัวหน้าเชฟ - F&B (OKONOMI) รับผิดชอบในการควบคุมต้นทุนอาหารและการบริหารจัดการงานในครัว รวมถึงการรักษามาตรฐานความสะอาดและการปฏิบัติตามขั้นตอนต่างๆ เพื่อให้การดำเนินงานในครัวเป็นไปอย่างมีประสิทธิภาพ

Kewajiban

• ควบคุมต้นทุนอาหารและบริหารจัดการงานในครัว รักษามาตรฐานความสะอาด (Hygiene Standard) ของพื้นที่ครัว, จัดการเก็บวัตถุดิบอย่างถูกต้อง และการปฏิบัติตาม H&S, ความปลอดภัยของอาหาร, ความสะอาด, มาตรฐาน, ขวัญกำลังใจของทีม และปฏิบัติตามขั้นตอน (SOPs)
• ตรวจสอบมาตรฐานรูปแบบของการนำเสนออาหาร (including savory, pastry, pantry) และการบริการจัดส่งอาหารของครัวจะต้องผ่านการสร้างสูตรอาหารโดยละเอียดและการฝึกอบรมอย่างสม่ำเสมอ
• ตรวจสอบตารางการทำงานของพนักงานเพื่อให้มีบุคลากรเพียงพอต่อการปฏิบัติงาน
• การจัดการสต๊อค/สินค้าคงคลัง
• การวิเคราะห์และคาดการแนวโน้มการใช้งานเทียบกับงบประมาณ
• ควบคุมและตรวจสอบให้แน่ใจว่าระบบควบคุมต้นทุนได้มีการประสานงานกับฝ่ายจัดซื้อ/ฝ่ายบัญชี รวมถึงวิธีการคิดต้นทุน การอัปเดตราคา การจัดการกับวัตถุดิบที่ถูกวิธี ฯลฯ
• ตรวจนับสต๊อค และสต๊อคสินค้าอย่างถูกต้องครบถ้วน โดยส่งต่อให้กับทาง production
• ฝึกอมรมพนักงานให้สต็อคสินค้าอย่างถูกต้องโดยมีตัวอย่างและคอยสนับสนุนเมื่อจำเป็น
• มีส่วนร่วมในการพัฒนาและการใช้งาน SOPs ตามความจำเป็น เพื่อสร้างมาตรฐาน

Kualifikasi

• วุฒิการศึกษาปริญญาตรีในสาขาที่เกี่ยวข้อง
• มีประสบการณ์ในตำแหน่งงาน 5-7 ปี
• สามารถคิดและควบคุมต้นทุนอาหาร
