About this position

The Hygiene Manager is responsible for ensuring that the hotel maintains high standards of sanitation and hygiene in all food handling areas. This includes verifying compliance with food safety regulations, providing training on proper food handling practices, identifying and addressing potential risks, and offering technical advice on food labeling.

Responsibilities

• Develop and Maintain Standards: Establish and maintain minimum hygiene standards for all work areas, stores, receiving, and disposal areas.
• Records Management: Ensure effective and efficient maintenance of sanitation and hygiene records.
• Methodology Manual: Develop and maintain an up-to-date methodology manual for use by section personnel.
• Communication and Coordination: Promote effective communication and coordination with all staff members regarding hygiene practices.
• Sanitation Inspections: Conduct monthly sanitation inspections throughout all food handling areas and generate reports.
• External Liaison: Liaise with external agencies on sanitary matters.
• Food Safety Training: Provide in-house food hygiene training for all food handlers.
• Complaint Handling: Handle complaints or inquiries from customers and local health departments regarding food hygiene.
• Kitchen Inspections: Conduct daily kitchen inspections and provide corrective action plans as needed.
• Vendor Inspections: Conduct regular vendor inspections in partnership with purchasing and culinary leadership.
• Equipment Inspections: Conduct regular inspections of kitchen equipment and verify that defects and non-conformities are addressed.
• Cleaning Program: Coordinate cleaning programs in all F&B areas and identify areas for improvement.
• Employee Relationships: Establish and maintain open and collaborative relationships with employees.
• Pest Control: Liaise with the pest control company and monitor pest control performance.
• Hygiene Standards: Maintain and improve hygiene standards throughout the operation.
• Documentation: Maintain documentation on all hygiene and food safety standards.
• Special Projects: Complete special assignments and projects as assigned by superiors.

Requirements

• Bachelor's degree in Hotel and Restaurant Management, Hospitality, Business Administration, or related major.
• Minimum 2-3 years work experience as Hygiene Manager in a hotel or similar large restaurant complex, preferable in 4- or 5-star hotel.
• Excellent spoken and written Thai and English.
